Corned Beef Hash

Corned beef hash, serves 2.

Ingredients:

1 can of corned beef
1 can of baked beans
A couple of potatoes (or a serving of instant mash)
A few mushrooms
A clove of garlic
An onion
Two egs
A slug of olive oil

Method:

Prepare and cook the potatoes as mash.
Finely chop the garlic, onion and mushrooms,fry in a large frying pan or wok with the olive oil.
Chop the corned beef into large cubes, and add to the pan.
Add the can of beans, with the juice.
Add the mashed potato.
Stir until it is all mixed up.
Leave on a high heat.
When a crust has formed on the bottom, stir again (I prefer to use a wooden spatula).
In the meantime, fry the eggs.
Server with an egg on top.

Pork chops in apple sauce

Ingredients:

Pork loin steaks or chops
1 onion
2 apples
some apple juice or cider
cornflour

Method:

Preheat oven to 180C (160C fan oven)
Chop the onion and fry in a flat frying pan, put into casserole dish when browned.
Fry the chops on both sides until cooked.
Put the chops in the casserole dish.
Peel an chop the apples, and put into casserole dish.
Pour juice or cider until it comes up almost to cover the rest of the ingredients in the casserole dish.
Put lid on dish, or cover with foil, and cook in the oven for 90 minutes.
Take lid or foil off, and cook for another 20 mins
Take out of the oven.
Mix 2 teaspoons cornflour with some water, and add to the dish. Stir, and leave for 2 minutes to thicken.
Serve with roast vegetables (potatoes and butternut go well).

Savoury Scones

Ingredients:

8oz plain flour
1 tbsp baking flour
1/2 tsp oregano
2oz butter
1/4 pint milk

Method:

Sieve together flour and baking powder, rub in the butter.
Add oregano and stir well.
Stir in milk and knead the dough.
Turn onto a floured surface and roll to a thickness of 2cm.
Cut into shapes then bake at 180C until browned lightly.

Scones

Ingredients:
2 cups flour
pinch of salt
1 desert spoon sugar
2 teaspoons baking powder
¼ cup cooking oil
1 egg, beaten
milk
Optional:
handful of raisins, sultanas
100g grated cheese

Method:
Sift together flour, salt, sugar and baking powder.
Add together oil, beaten egg, and make up to 1 cup with milk.
Add to flour mixture. At this point add cheese or dried fruit if desired. If dough is too dry, add more oil and milk in equal measure.
Roll onto a flat floured surface until approx 2cm thick. Using a cookie cutter, cut through and place onto a greased baking tray. Makes approx 8 scones.
Bake at 215 to 230 C for 10 minutes.

Thai green curry

Ingredients:

Chicken (or king prawns)
1 onion
1 or 2 cloves garlic
3 or 4 mushrooms
1 yellow or green pepper
1 small courgette
1 fresh chilli (or 2 sun-dried ones, or some dried chilli flakes)
1 can coconut milk, or 1/4 block coconut cream mixed with a mug of boiling water
4 or 5 kaffir lime leaves
oil to fry
rice, to serve

Put rice on to cook.
Chop the onion and garlic, fry in the oil. Chop the chicken and add (or prawns if raw), fry until cooked. Add other chopped vegetables and chilli. Add coconut milk and kaffir lime leaves. Let simmer until rice is cooked, and serve.

5 minute chocolate mug cake

5 minute chocolate mug cake from Chris Evans' Radio 2 show


Ingredients

* 4 tbs / 45 gms self raising flour
* 4 tbs / 55gms caster sugar
* 2 tbs / 17gms cocoa powder
* 1 egg
* 3 tbs / 43 mls milk
* 3 tbs / 25 mls sunflower oil
* 3 tablespoons chocolate chips (optional)
* A small dash of vanilla extract
* 1 large coffee mug
* Double cream or creme fraiche - optional for serving

Method

1. Add dry ingredients to the mug, and mix well.
2. Add the egg and mix thoroughly
3. Add the milk and oil - mix well (don't forget the corners / edges of the mug).
4. Add the chocolate chips (if using) and vanilla extract, and mix again
5. Put your mug in the microwave and cook for 3 minutes (in a 1000 watt microwave).
6. The cake will rise above the top of the mug, but don't worry it’s supposed to!
7. Allow to cool a little, tip out onto a plate.

Recipe for Stawberry Milkshake (Aston Guild Version)

In a pint glass, put:
1x shot vodka
2x shot advocaat
some blackcurrent cordial.
Mix well with a straw.
Fill to half pint mark with cider.
Top with lager to fill pint glass.
